Lemon & Coconut Balls

  • Serves: 12 balls

You will need:

  • 1 cup coconut plus extra for dusting
  • 1 tbsp Kfibre
  • 1 cup macadamia nuts
  • 4 tbsp rice malt syrup
  • Juice of half a lemon
  • Rind of 1 lemon

Make it:

  1. Combine all ingredients in a food processor and pulse until mixture comes together. Roll into balls and dust with coconut.
  2. Refrigerate until firm
