Smoothie bowls are the best excuse to eat soft serve for breakfast. Yes, a smoothie bowl is just a fruity glorified soft serve. Not only are these delicious and pretty (yes, eating with your eyes is a thing), but they are a refreshing, easy and healthy breakfast.
Of course, you can chuck just about anything in a smoothie bowl, fresh fruit, frozen fruit, protein powder, nut butters, veggies, milk, yoghurt. It’s all fair game. Pineapple, mango and coconut give this recipe a more tropical theme and I can just imagine lying on the beach in south Thailand to enjoy it. Of course, I have added the magic ingredient, our favourite gut health powder, Kfibre. This way you can nourish your gut at the same time as you nourish your taste buds and your soul.
Summer Smoothie Bowl
Prep time: 5 minutes
Cooking time: nil
You will need:
- 1 mango, chopped & frozen
- 1 firm banana, chopped & frozen
- ½ cup (3oz) pineapple chunks, frozen
- 1 cup (8oz) coconut milk
- 1 cup (8oz) almond milk
- 2 tsp maple syrup
- 2 tsp Kfibre
- Chia seeds
- Flaked almonds
Place all ingredients in a blender and whizz until smooth. Divide between two bowls and add toppings of your choice.
Low FODMAP: Replace mango with ½ of a dragon fruit
Dairy free: no changes necessary
Gluten free: no changes necessary
