These are the easiest no bake vegan protein bites around! When I say I’m hungry, you then have about 8 minutes until I’m a totally different person! So having a supply of these protein bites in the freezer or my handbag really ensures that I’m pleasant to be around.

These protein bites are not only a great source of protein, but we also upped the goodness by adding Kfibre for your gut bugs. Kfibre is made by “washing” the sugarcane to remove the sucrose. What you are then left with is a complex prebiotic fibre that hasn’t been heat treated. This means not only do you get the benefits of the prebiotics, you also get the polyphenols, antioxidants and other compounds that occur naturally in the plant itself.

You will need:

3 cups rolled oats

1 tbsp Kfibre

½ cup plant-based protein powder of choice

1 cup peanut butter

½ cup maple syrup

½ cup dark chocolate chips

Make it:

  1. In a large mixing bowl combine oats, Kfibre, and protein powder. Add peanut butter, maple syrup and chocolate chips and mix well.
  2. Lightly wet your hands and roll into balls. Place on a plate and refrigerate overnight until firm.

Modifications:

Low FODMAP:

  • Use low FODMAP protein powder
  • Serve size: 2 balls

Gluten free:

  • Omit rolled oats and replace with rice flakes
